Who are we kidding? Frittata is just a crustless quiche.

Over the last couple of years, we have seen the introduction of ‘crustless quiches’ for those of us who do not want to enjoy the delicious calories pastry provides.

Here is the issue: When is a quiche, not a quiche but a Frittata? Or is a Frittata an omelette in disguise? Who knew it could create such existential angst?

In the meantime, here is a yummy recipe to use up those courgettes that you wondered what to do with.

Courgette fritters

Ingredients:

225g grated courgettes – place them in a colander to let any water to be released.

50g grated onion – red or white

85g grated sharp cheddar or cheese you prefer.

50g self-raising flour

2 medium eggs beaten

A dash of milk if needed

Salt and pepper to taste.

Method:

Squeeze any water from the courgettes and put them in a bowl. Mix all the ingredients together.

Add a little oil or butter to a frying pan. You can cook the mixture on low heat in a non-stick pan to create a Frittata or create mini fritters by adding small dollops to the pan. Smooth each spoonful out and cook for 2 and a half minutes on one side, then repeat on the other side.

These are tasty, hot or cold.
